Cathy's Shortbread Cookies

Ingredients
- 3/4 lb butter, at room temp
- 1 cup sugar
- 1 tsp vanilla
- 3 1/2 cup flour
- 1/4 tsp kosher salt
Method
- Preheat oven to 350.
- In bowl mix room temp butter & sugar to just combine. Add vanilla.
- In med. bowl sift together flour & salt, then add to butter mixture. Mix at low speed until dough comes together.
- Dump onto floured surface and roll into flat disc, cover with plastic wrap and put in refrigerator for 1/2 hr.
- After removing from refrig roll to 1/2" thick and cut cookies. Bake for 20-25 min.
