Deep Fried Turkey

Ingredients
- 1 15lb turkey
- 25 whole bay leaves
- 3 1/4 tps dried thyme
- 3 1/4 tps dried oregano
- 1 1/2 tps whole black pepper
- 3 TBs konriko or other cajun seasonings
- 2tps garlic powder
- 4 gallons peanut oil
Method
- wash turkey in and out. pat dry. Finely grind all spices and mix.
- rub dry rub inside, under skin, and outside skin. Cover and marinate overnight.
- Bring turkey to room temp.
- Tie up turkey. (fold neck skin over and skewer, tuck wings under, truss legs together.
- Heat oi to 360, maintain temp while cooking.
- fry until brown about, 45 minutes or 3 min per lb.
- Drain turkey for 15 min. before carving
