Garden Gazpacho

Ingredients
- 1/3C red onion, chopped
- 2T capers
- 2C roma tomatoes, chopped (3 Romas=1C)
- 1/2C cucumber, seeded and chopped
- ½ C celery, chopped
- 1/2C red bell pepper, chopped
- 2 Cans V-8 juice (5.5oz each)
- ¼ C chopped fresh parsley
- 2T red wine or sherry vinegar
- 1T Worcestershire sauce
- 1/2t paprika
- 1/2t kosher salt
- 1/2t Tabasco
- 2C ice cubes
Method
- Mince onion and capers together in food processor. Remove to large serving bowl.
- Pulse tomatoes in food processor to chop up to small-bite pieces. Remove. Do the same for the cucumber, celery and red bell pepper – I had to do each one individually because my processor is so small.
- Stir in the V-8, parsley and all the seasonings.
- Add ice cubes and refrigerate until ready to serve. (Remove ice cubes before serving!) Enjoy!!!
