Green Beans with Warm Bacon Dressing
Ingredients
- 1/2 Pound Fresh Green Beans, trimmed
- 1 Tablespoon Chopped Shallot
- Salt
- 2 Slices Bacon, diced and browned
- 2 Teaspoons White Wine Vinegar
- Freshly Ground Pepper
Method
- Cook green beans in a large pan of salted boiling water for about 8 minutes.
- Drain and put in serving bowl.
- While the beans are cooking, Brown the bacon.
- Once brown, drain on a paper towel.
- Add shallots to the bacon fat and saute for 30 seconds.
- Remove the pan from the heat and cool.
- Stir the vinegar into the shallots.
- Season with salt and pepper.
- Pour over the beans.
- Top with the bacon.
- Serves 2.
