Lemon Dijon Vinaigrette

Ingredients
- ½ cup plus 2 tablespoons fresh lemon juice
- ½ cup Dijon mustard
- 1 cup olive oil
- 2 tablespoons shallots, finely chopped
- 2 tablespoons fresh parsley, finely chopped
- ½ teaspoons fresh thyme, finely chopped
- ½ teaspoons kosher salt
- ½ teaspoons freshly ground black pepper
Method
- Whisk together wet ingredients. Stir in shallots and herbs. Season with salt and pepper. Use immediately, or strain shallots and herbs and refrigerate fo later.
