Ingredients
Brownie base
2 1/4 cup cocoa powder- 2 cups oil
- 1 1/2 cups water - HOT
- 6 cups sugar
- 6 each eggs
- 2 cups pastry flour
- 2 cups cake flour
- 1 1/2 teaspoons salt
- 3/4 teaspoon baking soda
Silk top
2 pounds butter, softened- 4 cups sugar
- 8 each egg yolks
- 4 whole eggs
- 2 pounds bittersweet chocolate, melted
- 4 cups Bailys
Method
Brownie base
Mix oil and cocoa powder. Add the hot water and allow to mix until batter thickens. Add sugar eggs and mix in incorporate. Sift together the remaining dry ingredients and add to the wet mix and mix just to incorporate. Prepare a 9" spring form pan with parchment paper and spray parchment with Pam. Deposit batter into pan and bake at 300 degrees in a convection oven for 35 - 40 mins. Remove from oven and pour 1/4 cup Bailys just around the outside edge of the cake. Cool.Silk top
Place butter and sugar in mixing bowl - use the whip. Whip 5 minutes. Add 1/2 of the eggs. Scrape bowl and whip 5 minutes. Repeat with remaining eggs. Add melted chocolate. Scrape bowl. Whip 5 mins. Add Bailys. Scrape bowl. Whip 5 minutes. Deposit into pans. Freeze overnight. Unmold the next day. Add a fudge topping (no recipe included) and eat.
