Ultimate Twice-Baked Potatoes
Ingredients
- 4 large baking potatoes
- 8 strips bacon
- 1 cup sour cream
- 1 cup shredded Cheddar cheese, divided
- 8 green onions, sliced, divided
- ½ cup milk
- 4 tablespoons butter
- ½ teaspoon salt
- ½ teaspoon ground black pepper
Method
- Gather the ingredients. Preheat the oven to 350 degrees F (175 degrees C).
- Bake potatoes in the preheated oven until tender, about 1 hour. Set potatoes aside until cool enough to handle.
- Meanwhile, cook bacon in a large, deep skillet over medium-high heat until evenly brown. Drain, crumble, and set aside.
- Slice potatoes in half lengthwise; scoop flesh into a large bowl. Reserve skins.
- Add sour cream, ½ cup cheese, ½ green onions, milk, butter, salt, and black pepper to potato flesh; mix with a hand mixer until well blended and creamy.
- Spoon potato mixture into reserved potato skins; top with remaining ½ cup cheese, remaining ½ green onions, and bacon.
- Bake in the preheated until cheese is melted, about 15 minutes. Serve Hot!
